I've been planning since day one to offer an e-mail newsletter to those who opt-in, but now that I'm actually writing something, I'm not sure what to write.
I could summarize the most recent episode's topics, and/or I could write opinion pieces, and/or I could include topics that were deemed too minor for inclusion in the last episode...
Are there any good podcast newsletters I could subscribe to for ideas?

To get back on topic (not that binaural beats aren't highly relevant), I believe the Soccer Shout podcast has a newsletter. I'd check them out to see what they do. It's something we've toyed with ourselves, but just haven't had the time to start.

I would also suggest you ask your listeners what they want in a newsletter...or even if they want one...I would imagine you don't want to waste energy doing something that not many people are interested in. I've got a podcast subscription list of around 60 shows and am a self-confessed fanatic but I'm not remotely interested in any newsletters...I go to the websites and/or subscribe to the written-post blogs of those that I'm interested in and that's enough for me.

I would agree with BSquared. Most of your listeners won't give a crap. I would suggest a website, blog, and/or a myspace page to get the word out. They are actually way better because they double as advertising as well getting info out to your current listeners.

I think it's important to have a newsletter and opt-in form on your site. Building an opt-in list is important for future attempts to monetize. You can also do a survey once a year so you can figure out the demographics of your listeners. My newsletter provides the latest news from CR, news of upcoming podcast and people I will be interviewing, summary of my Spanish lessons covered in each podcast, and a travel tip. Right now I'm doing it monthly, once I get more people signed up, I'll do it weekly.

Those are all good ideas about promoting your show through a newsletter, Webzu. There's another good idea: An email database. I'm not talking about selling it, but if you want to sell an ad on your newsletter, the fact that it's opt-in gives you both a real number of the people it's reaching, and a desirable demographic because it's opt-in.
We don't have a newsletter, per se, but we do have PDF show notes (http://www.howtogirl.com/howtogirl/howto_show_notes/howto_show_notes.html) for select episodes (mostly recipes) that can be subscribed to separately from our podcasts.
