Hey,
I seem to have a unique problem - I've looked around on a few forums and noone seems to have had it before.

I have my podcast and feed and everything online and everything seems to be working ok with the feed and with itunes. I only want 1 episode available at any one time so I have deleted my orginal item in my rss and added a new one so there is still only 1 available. When I check it in the itunes store it shows up fine and I can download it but it does not download automatically for any of my subscribers. I thought the pubDate was what told itunes there was a new episode. This has got me stumped.

Here's my feed: www.todayscc.org.uk/podcast/rss.xml

Any ideas? I'm quite frustrated

Well, your feed checks out over all, but isn't 100% compliant with iTunes. Feed Validator (http://www.feedvalidator.org/check.cgi?url=http%3A%2F%2Fwww.todayscc.org.uk%2Fp odcast%2Frss.xml) found a couple of things out of whack, but I don't think it's anything that would stop it from updating automatically.
I see you're using iWeb to generate the feed (we do the same thing). How are you limiting the entries in your feed? Are you doing it through iWeb's RSS controls, or are you manually going into your feed after you've published it and removing the other entries?

I just edited the one I had originally generated in iWeb - kinda used it as a starting block really

I'd try setting iWeb to one blog/podcast entry. There may be something you cut out or didn't edit correctly, because I can't recall a time when iWeb's RSS feeds haven't worked as published.

I've not actually used iWeb to produce the rss - I used it to produce an rss for something completely different and then I've just pretty much used it as a starting block. Maybe I should go line thru line thru apple's example feed and start it from scratch?
I'll give that a go!
