Skype / OSX / non-skype guests

Okay I am sure ya'll are sick of this question. Here is my situation

I am a Mac OSX user
I want to record a podcast with 3 people (me and two others)

The two other people will be different people per cast, all of them are extremely non-tech savvy people. I would like to just be able to call them and record the coversation, edit it and be done with it.

How do I get to that point?

I have apple's garageband and I will purchase anything I need, but I am on a limited budget.

Call them on skype out, then record the whole thing. There are lots of ways of doing this. On the Mac, take a look at Audio Hijack Pro if you want a software based solution.
