Can anyone suggest a cheap piece of kit for recording our podcast with?

I plan to buy a mixer, route my mic thru it and to my pc to Skype.

I'll take the Skype output and route it back into the mixer.

I want to record me on one channel and my co-host on the other.

But...what shall I record it on?

I'm looking for something cheap and cheerful.

Would any MP3 player that claimed to record work okay?

Im doing pretty much the same ting you are doing, I have my mic going into the mixer, and a channel for skype from the sound card of my G4 and I have an RCA to 1/8 jack cable from the mixer to the Line in of my iRiver and I have the iRiver set on Line In recording at Stereo. Also make sure you are panned all the way to the left and the skype line all the way to the right so it records in stereo and in seperate channels. I got my Iriver on ebay for like $50 bucks and it's worked pretty well for me for this, especially since I can edit the Skype channel without messing with mine.

Soccer - what kind of PC are you using? Mac or Windows machine? Before I switched to Mac, I used a great program called N-Track studio that is both inexpensive and highly usuable.

I'd call it cheap and cheerful once you learn how to use it.
