Adobe Audition allows you to assign any sound card to any track. So since a USB mic is essentially a microphone and sound card in one you could assign any USB mic to any track.
Other software packages may do this as well.

Yes. This works in Garage Band (http://www.apple.com/ilife/garageband/), and Logic (Express & Pro) (http://www.apple.com/logic/).

I think the problem might be with the driver of the USB mic and not the host program. The Samson (last I heard) can't be used with more than one mic. You might want to check the websites of the manufacturers rather than taking these opinions and purchasing based on them.

I have a similar problem though with a twist.
I've managed to connect two USB Samson mics to the laptop using Audition and assigned the mics to their separate tracks as suggested by PWFenton but being a total newbie to this - I am not able to monitor any audio during setup or record. The only time I can hear audio is after recording when playback the file.
I am sure I am doing something dumb. Would appreciate any tips. Have fiddled with WMP rec/pb section but no luck. The audio card is simply that which comes with the laptop (AC97 Realtek)
A speedy reply would be much appreciated.

I do not have any experience with USB mics, but from what I understand, you will have trouble doing real time monitoring of your recording. Because of the nature of USB (it has to be processed before it can be heard) your monitoring will be behind your speaking by a few seconds (or fractions thereof).
Some USB mics come with a headphone jack in the mic itself so you can monitor before it goes into the computer.
