That's always a tough question.
We have 150 GB / mo, and are eating about 2.5 - 3 GB per day. That's plenty right now, but the shows only average about 8-10 MB (short 10 minutes shows, 3 times a week, at 192KBPS) I'm really happy with my provider and services so far.
If you're not already locked into a hosting deal, a lot of people are hosting at libsyn which declares unlimited bandwith usage.

aiming to produce 1 40 minute show per week, have 100 GB per month on a current server, which will be used only for podcast.
Expect maybe 10,000 listeners per week.
Im an editor, not a techie, so all advice welcome

1 minute @ 64Kbps = 60 x 64Kb = 60 x 8KB = 480KB ~= .5MB
40 min @ .5MB = 20MB per episode
20 MB x 10,000 listeners = 200,000 MB ~= 200GB bandwidth per episode
200 GB x 4.5 wks per month = 900 GB per month
If your expected listeners are close to accurate then you need an unlimited bandwidth plan.
If you want to keep the last 4 episodes online, then you probably need a 100MB storage allowance.
