I was wondering if this set up that I am thinking of would be able to work
Equipment:

Two 2.5mm (3/32) Phone Headsets

Could I use this to podcast and if not, can someone suggest another way to use the iRiver to record a podcast with 2 people.

The iRiver is fine - but it would work better with 2 Y cable spitters - so you can easily plug-in both the head-set & mic mini plugs. You could also use something like this - which has one mini-plug that goes into your iRiver on one end and a split cable to two wired lapel mics, called "The Squid". This has been in recent discussion so I suggest searching doing a search of the forum.

This is what we use. You can get an ifp799 for 150 bucks from Newegg.

its pretty close to what you are looking at. But the picture is nice and clear for you to see.
Its not the best, but for around 200 bucks- you can get acceptable quality and take it anywhere.
As for splitters- Get a Monster Isplitter its well worth it- we got the ones from radioshack and they are fine- but for the same price the Monster is clearly superior. Unless you like the Y of the splitter like we have (which we kinda do) because its more supple and movable then the plastic isplitter piece Y.

First, thanks for the help guys.
I looked at the headsets and they seem not to be compatible :( but I found a PC Microphone that looks promising

I saw a picture of it and it had a regular 1/8 jack, could I hook two of these up through a splitter and use headphones with another splitter to create the same effect as the headset? Thanks.

Not that you really need it, but a good mixer and mic can make a difference in sound quality. This Behringer mixer has been good to a lot of podcasters, and it's pretty cheap, but great quality:
