For those who use Audacity, but would like more control over the LAME MP3 encoder (and who aren't too familiar with the command line features, like me), I found this great converter that uses LAME and has a graphical interface. It's called CDex and you can get it from Download.com. Here's the link:

The way I set up my podcast is by recording in Audacity, saving it, then exporting it as a WAV file. Then I convert it to MP3 by using CDex. What's great is that you can go to the settings menu and select bit rates, stereo or mono, just about anything to create a quality sounding podcast without having to upload a huge file to your Website (and having the listener download and wait for a huge file).
